The end of February is near and this means two things to me. First, the 1000 burpee challenge is almost over and I’ve got some burpees to crank out in order to finish the month with 1000 total. Second, it was my son’s first birthday and cupcakes are a must.
So in some crazy way these two things go together.

As of today, February 26th, I have completed 535. This is definitely off track of my plan. But it’s not too late and I will complete 1000 burpees by Friday at midnight! Promise. My sister from Travel-iN Fitness, PA has completed them already. Such an over achiever. 😉
Since my son is my second child the 1st birthday party was a little more tame then my daughter’s, sort of. We spoiled him and bought a jumping castle to put in the garage which has turned into our gym/play area. Check out the TRX I installed earlier this week. I invited a friend of mine over with her kids to share in the jumping fun as well as the cupcakes.
Now onto the cupcakes part. My sister asked if I was going to make a “healthy” kind. Well, I’m not too sure there is such thing as a healthy cupcake. There of course are Paleo, gluten free and other variations. But at the end of the day there is usually some type of sweetener added which will react as a sugar in your body. And the less sugar the better in my mind. If cupcakes are on the menu, yes a lower sugar alternative would be best. But my time was short in researching a lower sugar alternative and I was excited to do some classic homemade baking.
I found the recipe from Kelly’s blog, Just a Taste. They were easy to make and yummy! The icing was pretty low in sugar, for an icing, and the cream cheese flavor really stood out. I made mini ones that were baked in a silicon wrap with fun colors for the kids too.
As I bake I am known to taste along the way. Needless to say I’m sure I had more then 2 cupcakes total. Opps! Now it’s time to get back on track with my 6 days of no sugar each week from my New Year’s Resolution. The worst part is having extra cupcakes lying around the house. Needless to say I have slipped today and ate another one. But as soon as I finish writing this I am going to be working on my burpee challenge. Only 465 to go!
